Jason Grant, Executive Chef
Chef Jason Grant was born and raised in Maine. He found his love of food and heard the call of the kitchen. Having traveled west for adventure, he started school at Western Culinary in Portland, Oregon. He worked for many great restaurants learning the style and flavors of the northwestern cuisine. Then heading south for his internship at The Boca Raton Resort & Country Club, he was influenced by the bright freshness of South Florida. Chef Grant then worked at The Pier House in Key west, a five star, four-diamond hotel, where he was able to commence his own style of plating and creating new flavor profiles.

In a quest to learn from the best, Chef Grant moved to New York City. After a few years in the hard, fast-paced New York kitchen scene, he found himself at the Ritz Carlton Central Park where he took an apprenticeship in the pastry kitchen with Chef Eric Hubert,
a longtime Jean George alumnus. Spending five years working and learning, he was on the move again, to West Africa. Seeing the tragedy that was the country of a war-torn Liberia, he was able to help in multiple kitchens teaching sanitation and proper food

Traveling back and forth from Maine to Liberia and Ivory Coast, Chef Grant took on the Executive Chef position for a new restaurant in Ogunquit, Katie’s on Shore Road. With the help of a great staff and hours of hard work, he turned it into one of Ogunquit’s best
and favorite places to dine during the beautiful summer months in Maine. While at Katie’s he won awards for best chocolate dessert and best table design with his gingerbread recreations of local buildings including Katie’s itself and Nubble Lighthouse. He was also
able to help the community hosting wine dinners to benefit the Marginal Way Preservation Fund.

With a new wife and a growing family, Chef Grant started working for the newly renovated Westin Portland Harborview, where he was able to help establish the growing catering business that is the cornerstone of the food and beverage department at the hotel.

On his journeys around the world, Chef Grant is on a constant quest to learn and grow with food and inspire people with his culinary creations. On the Edge restaurant is a direct reflection of his culinary philosophy, an artisanal approach that guides him to handle classic dishes with a method that is both innovative and reverent. Chef Grant’s culinary ethics are marked by the use of pure local ingredients, masterfully handcrafted components, and an unwavering devotion to his craft.
